Bali Blue Moon Wet Hulled - Organic
Blue Moon is named for its bluish beans, a result of the Giling Basah wet-hulling process. Grown on small, family-owned farms in the fertile volcanic soils of Mount Agung’s Kintamani highlands, Bali’s coffee cultivation follows the ancient Subak Abian system. Rooted in the Tri Hita Karana philosophy of environmental harmony, producers avoid pesticides and synthetic fertilizers. Partnering with exporters like Indokom, these farmers have secured organic and Rainforest Alliance certifications. Indokom also provides logistics and quality control support, boosting traceability and earnings through direct trade relationships.

Processing Method
After careful sorting, Balinese producers depulp, ferment, wash, and patio-dry their coffee cherries. The process then diverges from traditional methods with Giling Basah (wet hulling), where parchment is removed while beans are still moist. This unique step exposes the beans during drying, giving them a signature bluish hue and a distinct flavour profile ideal for export.

Taste Profile
A rich, strong, and smooth cup, Bali Blue Moon offers a cleaner profile than Sumatra or Sulawesi, with less earthiness and a sweeter character. Expect notes of malt and chocolate, complemented by the signature earthy terroir of wet-hulled Indonesian coffees. Full-bodied with a touch of acidity at medium roasts, it develops molasses undertones as it nears second crack, with subtle smoky hints at darker roasts. Ideal for strong-medium to dark roast lovers.
