Costa Rica’s coffee industry has evolved to prioritize quality over volume. Initially, large mills, often owned by multinationals, focused on high-yield hybrids like Catimor, mixing cherries regardless of quality, which led to mediocre coffee. However, small farmers shifted away from this system, adopting eco-friendly, small-scale equipment known as micro-mills. This allowed them to process their own high-quality coffee directly on farms, often using traditional cultivars like Typica, Bourbon, and Caturra, and sell it at premium prices. This micro-mill movement transformed Costa Rican specialty coffee, enhancing its diverse flavour profiles and quality.
