Necessity sparked creativity for the Chacón-Cubillo family when Oscar Chacón and Francisca Cubillo launched Las Lajas, one of Costa Rica's pioneering micro-mills in 2006. Nestled in the vibrant Central Valley, they shifted from relying on big multinationals to taking charge of their coffee cherries. Rising costs for organic farming made it essential for them to find a better way to thrive. Then, in 2008, an earthquake knocked out electricity and water during harvest season, pushing them to dry the cherries as a quick solution to keep their team employed. Over the past decade, the family has mastered the art of balancing eco-friendliness with delicious coffee profiles.
