Ethiopia Guji 2 Kayon Mountain – Organic Washed
Guji, a remote and forested region in Ethiopia’s Oromia area, is protected by the Guji tribe, who have long resisted mining and logging. Coffee is grown at high elevations, starting at 2,000 metres, in untouched environments. Kayon Mountain, a large estate founded in 2012 by Ismael Hassen, spans 500 hectares and grows select Ethiopian arabica varieties. Unlike most smallholder farms, Kayon Mountain exports directly, bypassing the Ethiopian Commodity Exchange, and follows organic, conservation-focused practices. The estate collaborates with 12 other certified organic farms. Guji is emerging as a key coffee region, known for its unique, candy-like coffee profiles.

Processing Method
During harvest, the estate picks from 9am-5pm and begins pulping at 7pm. The pulped seeds undergo a 3-part density sort and ferment for 24-36 hours, depending on the climate. After rinsing, the clean parchment is soaked for another 24 hours before being transferred to raised beds for 2-3 weeks of drying, with regular hand-turning. The washed coffees have jasmine-like aromas, a soft, sweet herbaceous quality, and a juicy structure.
