Processing Method
Coffee cherries are carefully hand-sorted, depulped, and fermented in fresh water for 24 hours before being washed and dried on raised beds for 2-3 weeks. To preserve quality, drying parchment is covered during the hottest hours. The fully dried coffee is rested before being milled and prepared for export in Addis Ababa.
