Ethiopia Yirgacheffe 3 Dumerso – Natural
Dumerso, a private washing station near Yirga Chefe in Ethiopia's Gedeo Zone, is owned by Hirut Berhanu, who transformed it after acquiring it in 2010. The station now employs over 400 people, 95% of whom are women, and is known for producing high-quality Yirgacheffe coffee. With organic and Rainforest Alliance certifications, Dumerso also focuses on sustainability, working on projects like converting coffee parchment into firewood. The station supports local farmers and workers by providing financial loans, healthcare, and accommodations during harvest seasons.

Processing Method
During harvest, farmers deliver ripe cherries daily to the Dumerso mill. Processing starts at 6pm with depulping and a density float pre-wash. The parchment is fermented underwater for 36-48 hours, depending on temperature, then briefly washed and transferred to raised beds for drying. Drying takes 9-11 days, with consistent turning to maintain even drying, while the parchment is kept at a depth of no more than 3 cm. The final moisture content is typically between 9.5-11.5%.
