Café Organico Marcala, S.A. (COMSA), based in Marcala, Honduras, is driven by the Finca Humana (the Human Farm) philosophy, placing human wellbeing and sustainable practices at its core. COMSA educates over 1,500 producer-members on living in harmony with nature, starting with their biodynamic farm, La Fortaleza. Here, members participate in hands-on training through week-long "Pata de Chucho" seminars, focused on sustainable and innovative agricultural techniques.

Beyond producing high-quality, organic coffee, COMSA invests in the future by supporting an international school to inspire young minds and foster future leaders of Finca Humana. Quality is guaranteed by traceability to Marcala’s protected origin and a meticulous process, including hand sorting, cherry floating, fermentation, and long drying times—all infused with COMSA’s holistic philosophy.

Processing Method

Producers bring their cherries to a centralised wet mill that features environmental controls to ensure that water is returned to the ecosystem without contamination. At the mill, the cherries are depulped and fermented for 36 to 48 hours, then washed and sorted by density in water channels. Finally, the coffee is sun-dried on patios until it reaches 11% moisture. This process results in a traceable community lot with a vibrant regional profile, leading to better earnings for the producers.
