Nicaragua Dipilto SHG EP
Cafetos de Segovia, an export company founded by sisters Ana and Martha Albir Sotomayor in 2015, champions quality and transparency for coffee from small family farms in Nueva Segovia, Nicaragua. Their model empowers individual farmers with the tools and guidance needed for responsible farm management and post-harvest practices. This lot represents five farms from Dipilto: Finca El Naranjal and Finca San Andres (Julio Medina), Finca El Cipres (Gustavo Martinez), and Finca Flor Azul (Ener Rodas). Cafetos de Segovia cups each lot and oversees export preparation in their dry mill, ensuring exceptional traceability and quality control from farm to cup.

Processing Method
Each farm follows a detailed post-harvest process: cherries are picked at peak ripeness, hand-sorted, floated to remove imperfections, depulped, fermented for 24 hours, washed, and density-sorted on-site. The wet parchment is then transported to Cafetos de Segovia’s drying facility, where it is carefully dried to 10.5% moisture on shaded patios and raised beds. This innovative step reduces farmers’ labour and infrastructure costs while ensuring uniform, gentle drying with controlled temperatures to preserve the quality of each farmer’s harvest.
