At Don Pepe Estate, a skilled team and robust on-site infrastructure guarantee meticulous attention to detail throughout the harvest. Cherries are carefully picked at peak maturity and floated to separate less dense and damaged seeds. The cherries are then depulped, fermented, washed, and dried on raised beds, with regular turning over an 8 to 12-day period.
The estate features a fully equipped cupping lab staffed by Q graders who assess quality before shipping. Additionally, specialized sorting equipment ensures traceability and maintains high-quality standards throughout the post-harvest process.
