The Torajan tribe of South Sulawesi, Indonesia, lives in mountainous villages, known for their boat-like houses and rich cultural heritage. Coffee here thrives at elevations up to 2000 MASL, some of Indonesia’s highest, amidst a unique landscape of misty rock walls and rice paddies. Recently, small-scale farmers with less than 3-acre plots have collaborated to establish community micro-mills, enhancing coffee processing and quality.

Processing Method
In Toraja’s micro-mills, producers meticulously sort, depulp, and ferment their coffee, then wet-hull it—a unique Indonesian process called Giling Basah. This method removes parchment while beans are still moist, giving them a distinctive bluish colour and the classic Indonesian flavour profile. Partnering with exporters like Indokom, local producers now benefit from improved logistics, traceability, and quality control, enabling smoother exports and better earnings through direct trade relationships.
