Uganda Sipi Falls – Organic Washed
Mount Elgon, straddling the Uganda-Kenya border, is a vast area of plateaus known for its organic coffee farms. Sipi Falls, a wet mill in Uganda’s Kapchorwa district, processes cherries from 8,000 organic farms on the northern slopes. The mill, founded over 20 years ago, was Africa's first certified organic producer in 2002 and continues to lead in high-quality, affordable coffee. Historically, farmers used rudimentary processing methods, but the Sipi Falls mill, built by export company Kawacom, unlocked the mountain's potential by improving large-scale coffee processing and quality.

Processing Method
Sipi Falls wet mill, located at 1,800m on Mount Elgon, handles all stages of coffee processing, including cherry retrieval, mechanical de-mucilaging, fermentation, washing, and drying. The on-site cupping lab tests each batch immediately after drying and weeks later to ensure high quality for export. This centralised processing results in clean, stable green coffee that preserves the delicate Elgon terroir. The improved processes raise cherry prices for farmers and reduce their labor and risk. The mill also recycles wastewater through filtered lagoons and runs an organic nursery to support local farmers.
